Cables hanging around can be dangerous. Trip over them and your session may end or worse... your set may tip over🤯ðŸ˜.
So secure them for those reasons and for a quick setup and break down. My tripod has all nessecary cables attached to it so it is just a matter of open the three legs and connect minimal final cables.
I am a huge fan of velcro (hooks and loops) and I've made use of that on multiple spots to secure the cables and get them out of the way where nessecary for stowage.
